Lately we’ve been on kick of baking up different kinds of breakfast foods – it started with some chocolate waffles, and then we decided to explore other vegetarian pastries that we could make for morning meals.  We love muffins, but sometimes you want something savory instead of sweet, so we decided to make cheddar and herb muffins instead.  They’re very easy to throw together, and it makes enough that you have muffins to snack on or eat as a side dish for days to come.  We liked this combination of cheese and herbs, and we think you will too – so read along and cook with us!

You’ll need:

  • Flour
  • Baking powder
  • Baking soda
  • Chili powder
  • Sugar
  • 4 ounces of cheddar cheese
  • Parsley
  • An egg
  • Vegetable oil
  • Buttermilk
  • Cooking spray

For your batter, whisk together 2 cups of flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/4 teaspoon of chili powder, 1 1/2 teaspoons of sugar, and some salt and pepper.  The grate up all your cheese plus chop 1/2 cup of parsley and mix that in as well.  Finally, add in your egg, 4 tablespoons of vegetable oil, and 1 1/2 cups of buttermilk and stir everything together.

Coat each of the cups in a muffin tin with cooking spray, then evenly divide your batter up among the cups.

Bake your muffins at 400°F for 25 minutes, until you can stick a toothpick into the middle of a muffin and it comes out clean.

Immediately after coming out of the oven, run a butter knife around the edge of each muffin to loosen them and make sure they’re not stuck to the tin.  Let them cool, then you can take them out to eat!

These are a nice departure from the usual sweet pastries you get when you make muffins.  Cheese and herbs are a classic savory combo, and they bake into these nice toasty handheld treats.  And these are very easy:  once you shred your cheddar and chop your parsley, all you need to do is mix and then pop your batter into the oven, and soon you’ve got some muffins!  We made these as a quick breakfast one morning – they’re also good to have around to nosh on or as an accompaniment to a meal.  However you eat them, it’s nice to sink your teeth into some warm and cheesy baked goods.
